  1. Peel and chop the potatoes into evenly sized chunks. This helps them cook more evenly.

  2. Place the chopped potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over high heat.

  3. Reduce the heat to medium and simmer the potatoes until they are tender when pierced with a fork, usually around 15-20 minutes. You'll know they are done when they easily break apart.

  4. While the potatoes are cooking, heat the milk or heavy cream and butter in a small saucepan over low heat until the butter is melted. Keep this mixture warm.

  5. Drain the cooked potatoes in a colander and return them to the pot. Place the pot back on the stove over low heat for a minute or two, stirring occasionally, to let any excess moisture evaporate.

  6. Use a potato masher or a ricer to mash the potatoes while they're still hot. This will make them fluffier. If you want super smooth mashed potatoes, you can also use a hand mixer or a potato ricer.

  7. Gradually pour the warm milk and butter mixture into the mashed potatoes, while continuing to mash and mix. Season with salt and pepper to taste. Be careful not to overmix, as that can make the potatoes gluey.

  8. Once the mashed potatoes are creamy and smooth, taste them and adjust the seasoning if necessary.

  9. Serve the mashed potatoes hot. You can garnish them with chopped chives, grated cheese, or crispy bacon bits if you like.
