Directions

  1. Prepare the Port Wine Syrup:

    • In a small saucepan, combine the Port wine, granulated sugar, and water.
    • Heat the mixture over medium heat, stirring until the sugar dissolves.
    • Bring the mixture to a gentle boil, then reduce the heat and simmer for about 10-15 minutes, or until it thickens to a syrupy consistency.
    • Remove the syrup from heat and set it aside.
  2. Prepare the French Toast Batter:

    • In a shallow dish, whisk together the eggs, milk, 1/4 cup of Port wine, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until well combined.
  3. Dip and Soak the Bread:

    • Heat a skillet or griddle over medium heat and add a small amount of butter to grease the surface.
    • Dip each slice of bread into the Port wine and egg mixture, making sure to coat both sides thoroughly. Allow any excess to drip off.
  4. Cook the French Toast:

    • Place the soaked bread slices on the heated skillet or griddle.
    • Cook for 2-3 minutes on each side, or until they are golden brown and crispy on the outside. You may need to add a bit more butter to prevent sticking.
  5. Serve:

    • Place the Port wine French toast on serving plates.
    • Drizzle the Port wine syrup over the top of the French toast.
    • Garnish with fresh berries, a dusting of powdered sugar, and a dollop of whipped cream if desired.
  6. Enjoy:

    • Serve the Port wine French toast while it's warm and enjoy the delicious and unique flavor.
