Directions

  1. Preheat your oven to 350°F (175°C).
  2. Season the pork ribs with salt and pepper. Then, lightly coat each rib with flour. This will help create a crispy texture when frying.
  3. In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Fry the ribs until they are browned on all sides, about 5-7 minutes. Remove the ribs and place them on a paper towel-lined plate to remove excess oil.
  4. In a separate saucepan, combine the ketchup, white sugar, white vinegar, soy sauce, pineapple juice, and water. Bring the mixture to a boil.
  5. In a small bowl, make a slurry by mixing the cornstarch with a tablespoon of water. Add the slurry to the sauce and stir well to thicken it. Simmer for a few minutes until the sauce thickens to your desired consistency.
  6. Add the bell pepper to the sauce. Cook for another 2-3 minutes until the vegetables are slightly tender.
  7. Place the fried ribs in a baking dish. Pour the sweet and sour sauce over the ribs.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes, or until the ribs are tender.
  9. Remove the foil, and bake for an additional 10-15 minutes to let the ribs get a bit crispy and the sauce to caramelize.
