Directions

1: Preheat the Oil:

Start by heating your vegetable oil in a deep fryer or a large, deep skillet to 375°F (190°C). You'll need enough oil to submerge the wings.

2: Prep the Wings:

Rinse the chicken wings and pat them dry with paper towels.

In a mixing bowl, combine the flour, salt, and black pepper.

Dredge each chicken wing in the flour mixture, shaking off any excess.

3: Fry the Wings:

Carefully place the wings in the hot oil, a few at a time, without overcrowding the pan. Fry for about 10-12 minutes or until they're golden brown and the internal temperature reaches 165°F (74°C). Use a wire rack or paper towels to drain excess oil.

4: Make the Buffalo Sauce:

While the wings are frying, melt the butter in a saucepan over low heat. Stir in the hot sauce, white vinegar, cayenne pepper, garlic powder, and paprika. Cook for a few minutes, stirring until well combined. Taste and adjust the spiciness and salt if needed.

5: Coat the Wings:

Place the fried wings in a large mixing bowl. Pour the buffalo sauce over them. Toss the wings to evenly coat them with the sauce.

6: Serve:

Serve your Buffalo chicken wings hot with celery sticks and your choice of dipping sauces (usually blue cheese dressing or ranch dressing).
