Polish Pierogies Recipe

Directions

1. Make the Dough:

a. In a mixing bowl, combine the flour and salt.

b. In a separate bowl, whisk the egg and add the warm water to it.

c. Slowly pour the wet ingredients into the dry ingredients, mixing until a dough forms.

d. Knead the dough on a lightly floured surface for about 5 minutes until it's smooth. Then, cover it with a clean towel and let it rest for about 30 minutes.

2. Prepare the Filling:

a. Boil the potatoes until they're soft. Drain them and let them cool.

b. Mash the cooled potatoes until smooth.

c. In a separate bowl, combine the mashed potatoes, cottage cheese, chopped onion (if using), salt, and pepper. Mix everything well.

3. Assemble the Pierogies:

a. Roll out the dough on a floured surface until it's about 1/8-inch thick.

b. Use a round cookie cutter or the rim of a glass to cut out circles from the dough.

c. Place a small spoonful of the potato and cheese filling in the center of each dough circle.

d. Fold the dough over the filling to create a half-moon shape. Press the edges to seal, and make sure there's no air trapped inside.

4. Cook the Pierogies:

a. Bring a large pot of salted water to a boil.

b. Carefully drop the pierogies into the boiling water and cook them until they float to the surface, usually for about 3-4 minutes.

c. Remove the pierogies with a slotted spoon and place them on a plate.

5. Serve:

a. Serve the pierogies hot with sour cream.

b. You can also sauté them in a little butter or oil until they're lightly browned for a different texture.

c. If you like, top with fried onions for added flavor.
