For the Beef Stir-Fry:1 pound (450g) beef sirloin or flank steak, thinly sliced into strips2 tablespoons soy sauce1 tablespoon oyster sauce1 tablespoon cornstarch1 teaspoon sugar2 cloves garlic, minced1-inch piece of ginger, minced2 tablespoons vegetable oil1 red bell pepper, thinly sliced1 green bell pepper, thinly sliced1 onion, thinly sliced1 cup broccoli florets1 cup snap peas, trimmedSalt and pepper to tasteRed pepper flakes (optional, for heat)For the French Fries:4 large russet potatoes, peeled and cut into matchsticksVegetable oil for fryingSalt to taste

Directions

1. Prepare the French Fries:

  • Heat vegetable oil in a deep fryer or large, deep pan to 350°F (175°C).
  • Carefully add the potato matchsticks to the hot oil in batches, ensuring not to overcrowd the pan.
  • Fry until they are golden brown and crispy, about 4-5 minutes per batch.
  • Remove with a slotted spoon and drain on paper towels. Season with salt immediately. Keep warm while you prepare the stir-fry.

2. Prepare the Beef Stir-Fry:

  • In a bowl, combine the soy sauce, oyster sauce, cornstarch, and sugar. Mix until the cornstarch is dissolved.
  • Marinate the sliced beef in the sauce for about 15-20 minutes.
  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
  • Add the marinated beef and stir-fry for 2-3 minutes or until it's browned. Remove the beef from the pan and set it aside.
  • In the same pan, add the remaining 1 tablespoon of vegetable oil.
  • Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  • Add the sliced red and green bell peppers, onion, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes or until the vegetables are tender yet crisp.
  • Return the cooked beef to the pan and stir-fry for an additional 2 minutes to combine everything.
  • Season with salt and pepper to taste. If you like it spicy, you can also add red pepper flakes at this point.

3. Serve:

  • Transfer the beef stir-fry and vegetables to a serving platter.
  • Serve the stir-fry alongside the crispy French fries.
