Thai Dumpling Soup Recipe


Thai dumpling soup, also known as Tom Jued Guay Tiew in Thai, is a delectable and comforting dish that showcases the rich flavors of Thai cuisine.

For the Dumplings:250g ground pork or chicken1/2 cup finely chopped cabbage1/4 cup finely chopped water chestnuts2 cloves garlic, minced1 tablespoon soy sauce1/2 teaspoon salt1/4 teaspoon white pepper1 eggDumpling wrappers (you can find these at an Asian grocery store)For the Soup:4 cups chicken or vegetable broth2-3 slices of ginger2-3 cloves garlic, smashed1-2 small carrots, sliced into thin rounds1 cup sliced mushrooms (shiitake or straw mushrooms work well)1 cup sliced napa cabbage or bok choy1/2 cup glass noodles (bean thread vermicelli), soaked in hot water and cut into short lengths2-3 green onions, slicedSalt and white pepper, to tasteSoy sauce or fish sauce, to tasteFresh cilantro leaves for garnishLime wedges for serving

Directions

Prepare the Dumplings:

In a bowl, combine the ground pork or chicken, finely chopped cabbage, water chestnuts, minced garlic, soy sauce, salt, white pepper, and egg. Mix everything together until well combined.

Assemble the Dumplings:

Take a dumpling wrapper and place a small spoonful of the meat mixture in the center.
Fold the wrapper in half to create a half-moon shape.
Use a bit of water to moisten the edges and press them together to seal the dumpling. You can also crimp the edges for a decorative touch.
Repeat until all the dumplings are assembled.

Prepare the Soup:

In a large pot, bring the chicken or vegetable broth to a simmer.

Add the slices of ginger and smashed garlic to the pot.

Allow the broth to simmer for about 10 minutes to infuse the flavors.

Cook the Dumplings:

Gently drop the dumplings into the simmering broth.

Let the dumplings cook for about 5-7 minutes or until they are cooked through. They will float to the surface when they are done.

Add Vegetables and Noodles:

Add the sliced carrots, mushrooms, and napa cabbage or bok choy to the pot.

Let the soup simmer for another 5-7 minutes until the vegetables are tender.

Add the soaked and cut glass noodles to the pot and cook for a few more minutes until they are heated through.

Season and Serve:

Season the soup with salt, white pepper, and soy sauce or fish sauce to taste.

Remove the slices of ginger and garlic if desired.

Ladle the soup into bowls, garnish with sliced green onions and fresh cilantro leaves.

Serve with lime wedges on the side for an extra burst of flavor.
