It's a comforting and hearty side dish that is often served in Ireland, especially on special occasions like St. Patrick's Day or alongside a main meal.

Directions

  1. Start by boiling the potatoes in a large pot of salted water until they are tender. This should take about 15-20 minutes. You can test for doneness by inserting a fork or knife into a potato piece; it should easily slide in.
  2. While the potatoes are cooking, steam the chopped cabbage or kale until it's tender. This should take about 5-7 minutes. Drain and set aside.
  3. Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or a ricer until they are smooth and lump-free.
  4. In a separate saucepan, heat the milk or cream over low heat until it's warm but not boiling. You want it to be hot when you add it to the potatoes.
  5. Add the warm milk or cream to the mashed potatoes gradually, stirring continuously until you achieve your desired creamy consistency. You may not need to use all of the milk or cream, so add it a little at a time. Season with salt and pepper to taste.
  6. In a large skillet, melt 2-3 tablespoons of butter over medium heat. Add the chopped scallions and cooked cabbage or kale. Sauté for about 3-5 minutes until the vegetables are tender and the scallions are fragrant.
  7. Combine the sautéed vegetables with the mashed potatoes and mix everything together until well incorporated.
  8. Taste the colcannon and adjust the seasoning with more salt and pepper if necessary. You can also add more butter for extra richness if desired.
