- Flake the cooled cod with a fork, removing any bones and skin.
- In a large bowl, combine the mashed potatoes, flaked cod, onion, garlic, parsley, baking powder, flour, and eggs. Mix well until you have a smooth and uniform mixture.
- Season with salt and pepper to taste.
- The vegetable oil should be heated in a deep pan over medium heat.
- Use spoonfuls of the mixture and drop them into the hot oil.
- Fry the fritters for about 2 to 3 minutes each side, or until golden brown and crispy.
- Remove the fritters with a slotted spoon and drain on a paper towels lined in a plate.
