Directions

  1. Peel the bananas and slice them thinly using a mandolin or sharp knife. Try to cut the bananas in slices that are about 1/8 inch thick.
  2. Heat about 1-2 inches of vegetable oil in a deep, heavy-bottomed pan over medium-high heat. You want the oil to be hot but not smoking (around 350-375°F).
  3. Once the oil is hot, carefully add a handful of banana slices to the pan. Fry them for 1-2 minutes or until they are golden brown and crispy, using tongs to flip them over halfway through cooking.
  4. Once the chips are cooked, remove them from the pan using a slotted spoon and transfer them to a plate lined with paper towels to drain off any excess oil.
  5. Repeat the process with the remaining banana slices, frying them in small batches until all the slices are cooked.
  6. If desired, sprinkle the chips with salt or sugar to taste while they are still warm. Serve right away or keep for up to a week in an airtight container.
