Simple Pasta Carbonara Recipe


Pasta carbonara is a classic Italian dish made with spaghetti, eggs, pancetta or bacon, grated Pecorino Romano or Parmigiano-Reggiano cheese, black pepper, and sometimes cream.

Ingredients

8 oz spaghetti or other pasta4 oz pancetta or bacon, diced2 cloves garlic, minced2 large eggs1/2 cup grated Parmesan cheeseSalt and black pepperChopped parsley (optional)

Directions

  1. In salted water, prepare the pasta as directed on the package until it is al dente.
  2. Cook the diced pancetta or bacon until crispy in a sizable skillet while the pasta is cooking. Once aromatic, add the minced garlic and simmer for an additional 30 seconds.
  3. Eggs, grated Parmesan cheese, a dash of salt, and black pepper should all be combined in a bowl.
  4. While draining the pasta, save about 1/2 cup of the cooking water.
  5. Add the hot pasta to the skillet with the pancetta/bacon and garlic. Remove it from the heat right away and let it cool.
  6. Pour the egg and cheese mixture over the pasta and quickly toss until the pasta is evenly coated.
  7. Add a little of the saved pasta water to the pasta if it feels dry until the appropriate consistency is achieved.
  8. If preferred, top hot servings with extra grated Parmesan cheese and chopped parsley.
