Directions

  1. Wash and chop the mixed greens and red onion into bite-sized pieces and place in a large bowl with chickpeas.
  2. Slice the cherry tomatoes and cucumber and add to the bowl.
  3. Slice radishes and add to bowl.
  4. Cut the avocado in half, remove the pit, and slice the flesh into bite-sized pieces. Add to the bowl.
  5. Grill the chicken or salmon and slice into bite-sized pieces. Add to the bowl.
  6. Squeeze fresh lemon juice over the salad.
  7. Drizzle olive oil, sprinkle with sea salt and black pepper over it.
  8. Toss together everything until the salad is all coated with the dressing.
  9. Serve immediately and enjoy!
