Directions
- Wash and chop the mixed greens and red onion into bite-sized pieces and place in a large bowl with chickpeas.
- Slice the cherry tomatoes and cucumber and add to the bowl.
- Slice radishes and add to bowl.
- Cut the avocado in half, remove the pit, and slice the flesh into bite-sized pieces. Add to the bowl.
- Grill the chicken or salmon and slice into bite-sized pieces. Add to the bowl.
- Squeeze fresh lemon juice over the salad.
- Drizzle olive oil, sprinkle with sea salt and black pepper over it.
- Toss together everything until the salad is all coated with the dressing.
- Serve immediately and enjoy!
